Strawberry Rhubarb Chicken Marinade

The Strawberry Rhubarb flavor is especially good with grilled chicken or pork, spinach salads, goat cheese, and summer fruit desserts.

Ingredients

  • ¼ cup Strawberry Rhubarb Shrub

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp thyme

  • Salt & Pepper
  • Optional: 1 tbsp Dijon mustard

Marinate chicken for 2–4 hours before grilling, baking, or searing.

  • Baked Chicken (Breasts or Thighs): Bake at 400°F (200°C). Brush additional glaze on during the last 5 to 7 minutes of baking.
  • Pan-Seared Chicken: Sear chicken in a skillet. Pour the additional marinade directly into the pan during the last 2 to 3 minutes, spooning it over the chicken as it thickens. 
  • Grilled Chicken: Grill over medium heat, turning the chicken once to let it char slightly.
